DOMAIN- FISH PROCESSING TECHNOLOGY

11 students have enrolled in the domain-fish processing technology. The fish processing domain mainly focuses on the hands-on skilled and entrepreneurship development in students. The students are engaged in development of different ready-to-eat valued added fish and fisheries products like fish cutlet, fish finger, fish sausage, squid pickle, shrimp pickle, etc. The products prepared are sold to the students, faculty and staffs within the campus. Fish processing waste are processed into valuable fish by-products like, fish meal chitin, chitosan, fish silage etc. The students are involved in planning of the product menu, procuring of ingredients, preparation and sales. After the preparation of products, quality evaluation of the products was also conducted. Feedbacks from customers are collected using 9 points Hedonic scale in order to understand the level of satisfaction. Students are also taught on post-harvest handling of fish as fish are highly perishable and required immediate preservation after caught, importance of quality and preservation, rules and regulations required for fish products. Students also get familiarized with different equipments that are used for preservation and preparation of fish and fisheries products.
