Lassi have always been anastoundingsummer cooler and thirst-quenching fermented dairy beverage in India. In view of the fact of ensuring healthy gut and therapeutic purposes, a study was conducted to develop a low fat and low sugar herbal lassi. The developed technology involved replacement of cane sugar with artificial sweetener ‘sucralose’ and reduction of fat content with incorporation of 3% lemongrass extract. The study was explored mainly to provide a product to diabetic patients who are restricted to take sugar. Besides providing regular flavor, it will additionally add medicinal properties to the product due to the incorporation of lemongrass extract.
